Ingredients
- 2 pounds beef chuck or round, cut into 1 1/2-inch cubes
- 2 tablespoons vegetable oil

- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme

ca 6 persca 1 kg bog alternativt fransyska
gula lökar
morötter
6 kryddpepparkorn
6 vit-eller svartpepparkorn
1 lagerblad
6 ansjovisfiléer
1 msk vinäger
1 msk sirap alternativt farinsocker
3 dl vatten
Sås:
6 dl vätska (sky+vatten)
1 köttbuljongtärning
3 msk vetemjöl
1 dl grädde
GÖR därför HÄR:
- Bryn steken och salta den. skal lök samt morötter samt skär dem i bitar. Lägg lök, morötter, pepparkorn, lagerblad samt ansjovis runt steken.
- Tillsätt vinäger, sirap alternativt farinsocker. Späd med en färglösluktlös vätska som är livsnödvändig i rundor och efterstek under lock på svag värme 1 1/4- 1 1/2 60 minuter eller tills innertemperaturen existerar 75 grader. Ta upp steken samt gör såsen.
- Sila och mät upp skyn, tillsätt en färglösluktlös vätska som är livsnödvändig och köttbuljong. Vispa ut mjölet tillsammans med lite från vätskan mot en slät redning. koka upp skyn, rör ner redningen samt koka min. Tillsätt grädden och smaka av.
Skär köttet i tunna skivor samt servera tillsammans potatis, sås och grönsaker.
